Modified atmosphere packaging (MAP) is to include/ exclude the air compound with which product interacts during storage, transportation and packaging of foods against enzymatical, chemical and microbiological decomposition; and gas types such as oxygen, carbon dioxide, nitrogen and ethylene into/ from the environment. It is a method that we use to alter the atmosphere around a food and prolong the shelf life of product.
